A basic muffin mix. Add your favorite berries or flavorings for great
tasting muffins your whole family will enjoy. Great to keep in emergency food
storage or for everyday use.
Ingredients: Bleached enriched wheat flour
(wheat flour, malted barley flour, enriched with niacin, reduced iron, thiamine
mononitrate, riboflavin, folic acid), sugar, vegetable shortening [partially
hydrogenated soybean- palm-cottonseed oils, propylene glycol mono and diesters
of fats and fatty acids, mono and diglycerides, soy lecithin, polysorbate 60,
TBHQ (preservative)], dried whole eggs, corn starch, nonfat dry milk, leavening
(sodium bicarbonate, sodium aluminum phosphate), wheat starch, salt, dextrose,
sodium stearoyl lactylate, cellulose gum, artificial flavors (milk).

Directions: Mix 3 cups muffin mix with 1 1/2
cups cold water in an electric mixer for 30 seconds on low speed, then 1
minutes on medium speed. Do not over beat. For added texture and flavor,
1 tsp oil may be added. May add fruits or other condiments. Grease
bottom of muffin tins and fill only 2/3 full. Bake at 375 F degrees
for 14-16 minutes or until done to the touch.
*Because of the
leavening in these mixes they may begin to expand in the can. When you
use the product it may require adding a small amount of baking powder to mix.
